Ingredients:
1 cup spelt flour
1 cup organic oats
½ cup coconut sugar (sometimes called coconut palm sugar)
½ teaspoon baking soda 1 tablespoon baking powder
2 cups finely chopped kale (total super food!!)
¾ cup organic all-natural applesauce (no added sugar)
1 mashed banana
1 cup blueberries
1 cup almond milk (vanilla or chocolate to add a little flavor boost!)
½ cup flax seeds ( a nice omega-3 and fiber boost!) can also add or replace with chia seeds for an extra energy boost!
1 cup dark chocolate chips
Grated coconut flakes to garnish on top
Directions: Preheat oven to 3250 and grease muffin tins lightly (try coconut oil spray!) Chop kale finely in food processer Add flour, oats, coconut sugar, baking soda and baking powder into large bowl. Add in kale, apple sauce and mashed banana. Keep mashing banana until all ingredients are wet. Slowly add in almond milk until mixture is of slightly pourable consistency. Finally add flax , blueberries and chocolate chips mix thoroughly. Pour or scoop into muffin tins and garnish top with coconut flakes Bake for 18-20 mins! Yields 12 muffins – I like to store in refrigerator after cooling, after all, fresh ingredients are being used!!
