Steak and Shrimp Stir Fry

This recipe is great for using up left over veggies in the fridge!  You can also substitute meat for chicken or tofu.

1 Lean 6 ounce sirloin steak, cut into thin strips (approx. 1/4 inch wide)

8 Large shrimp

1 Red bell pepper, cut into 1/2 inch cubes

16-20 Snap peas

4-5 White mushrooms, thinly sliced

1 Medium broccoli head, stems removed

3 Tablespoons peanut sauce

1/8 Cup crushed cashews

Fresh ginger to taste

Marinate steak in peanut sauce for 30 minutes (longer for more flavor).  Heat skillet or large pan on medium/high heat.  Add steak until meat begins to brown.  Add vegetables and peanut sauce.  Once vegetables start to cook, add shrimp.  Cook until shrimp is opaque.  Add cashews just prior to removing from heat.  Serves 2.

After graduating from Binghamton University with a degree in Economics and Political Science, she moved to New York City and went to work on Wall Street. After four years at Goldman Sachs and eight years at Morgan Stanley, she took time off to travel before getting married and relocating to Phoenix, Arizona in February 2013 to live with her husband. Michelle’s love of fitness started when working long hours as a Wall Street Analyst. An early morning run was her favorite way to manage her stress and get some much needed alone time.
