This recipe is great for using up left over veggies in the fridge! You can also substitute meat for chicken or tofu.
1 Lean 6 ounce sirloin steak, cut into thin strips (approx. 1/4 inch wide)
8 Large shrimp
1 Red bell pepper, cut into 1/2 inch cubes
16-20 Snap peas
4-5 White mushrooms, thinly sliced
1 Medium broccoli head, stems removed
3 Tablespoons peanut sauce
1/8 Cup crushed cashews
Fresh ginger to taste
Marinate steak in peanut sauce for 30 minutes (longer for more flavor). Heat skillet or large pan on medium/high heat. Add steak until meat begins to brown. Add vegetables and peanut sauce. Once vegetables start to cook, add shrimp. Cook until shrimp is opaque. Add cashews just prior to removing from heat. Serves 2.
