SPINACH; SUPERFOOD TUESDAY

Popeye may have been on to something eating all of that spinach!

Why it’s a superfood:

-It’s a good source of Iron

-Great source of Omega-3 fatty acids

-Loaded with Vitamins such as A, D, E, and K

-High in protein

-Good for heart health, skin health, eye health and of course, overall health!

Here is a great spinach salad recipe:

-6 ounces baby spinach

-1 red bell pepper, chopped

-1 yellow bell pepper, chopped

-1/2 cup grated Parmesan cheese

-1/4 cup olive oil

-1/4 cup rice vinegar

1.  In a large bowl, mix the spinach, peppers, and Parmesan cheese

2.  In a small bowl, mix the olive oil and rice vinegar.  Toss with the spinach mixture and serve.

Serves 6.
