Here is a great, delicious, satisfying breakfast or brunch!
Ingredients:
2 eggs
4 egg whites
2 slices turkey bacon
1 cup kale
1/2 cup sliced mushrooms
1/2 cup diced red peppers
Directions:
In a skillet on medium-high heat cook turkey bacon until done. Remove from pan, and dice when cooled. In the same pan, add mushrooms and peppers. If pan is dry, add extra virgin olive oil as needed. When mushrooms begin to brown, add kale. After one minute, add eggs, egg whites and turkey bacon and scramble until eggs are cooked. Makes 2 servings.
