Asian Chicken Meatballs, RECIPE FRIDAY

A unique twist on meatballs to spice up your dinner!

1 lb. ground chicken

1/2 tsp. coarse sea salt

1/2 tsp. black pepper

1 garlic clove, finely minced

1 tsp. freshly grated ginger

1 tbsp. coconut aminos

2 tsp. maple syrup

2 tbsp. coconut oil

Thoroughly mix chicken with salt, pepper, garlic, ginger, coconut aminos, and maple syrup.

Roll the mixture into golf-ball size meatballs.  Grill, roast, or broil the meatballs until cooked through.   Serve with brown rice and sautéed bok choy.

This recipe makes 2 dozen meatballs.
