Sweet Potatoes – A Super Food

With Thanksgiving and the holidays coming up here is a great super food to work into your family celebrations.

Why sweet potatoes are so good for you:

  • Sweet potatoes are a great source of vitamins A, B, C and D.
  • Sweet potatoes contain iron which helps move oxygen through the body.
  • Sweet potatoes contain magnesium which helps regulate blood pressure, heart rhythm and keep bones strong.

Here is a great oven roasted sweet potato side for any dinner!

Ingredients:

3 large sweet potatoes (washed, peeled, and cut into medium size pieces)

2 tablespoons olive oil

Dried oregano to taste

Salt and pepper to taste

Directions:

Preheat oven to 350 degrees. Coat baking dish with olive oil (so potatoes don’t stick).  Place sweet potatoes in baking dish and turn so they are coated with olive oil.  Sprinkle with oregano, salt and pepper to taste.  Bake for 60 minutes or until potatoes are soft.  Serves 4.
