Summer squash is in season – and here are some great reasons to try this great vegetable!

- Summer squash is low in fat.
Here is a great grilled summer squash recipe:
2 pounds summer squash
2 red bell peppers
1/4 cup extra virgin olive oil
1/4 cup shaved parmesan cheese (optional)
Preheat grill. Slice squash into 1/4 inch thick slices. Remove seeds from peppers, and slice into rings. Slice onions as well. Marinate all in the olive oil (15 minutes). Place veggies on grill about 5-10 minutes each side, depending on heat of your grill. Top with parmesan cheese if desired.
