Quinoa – A Super Food

Quinoa is popping up everywhere these days!  It’s delicious and great for you!

Why it’s a super food:

-It’s gluten-free

-It’s full of protein:  it contains all 9 essential amino acids that cannot be produced by the body and need to be taken in through our food.  Amino acids are the building blocks of proteins,

-High in dietary fiber, which may help lower cholesterol

-Quinoa is packed with Iron and Magnesium

– Can be used in breakfast, lunch or dinner meals

And a delicious Quinoa salad recipe:

1 cup of quinoa

2 cups water

1 (15oz.) can garbanzo beans, drained

1/2 cup dried cranberries

1/2 cup golden raisins

1/3 cup sliced almonds

1/4 cup mint leaves, chopped

3/4 teaspoon ground coriander

1/3 teaspoon ground cumin

1 tablespoon extra-virgin olive oil

Bring water and quinoa to a boil in a saucepan over high heat.  Reduce heat to medium/low, and simmer until quinoa is tender – 15-20 minutes, and water has been absorbed.  Refrigerate in a large bowl until cold.  Stir in all other ingredients, add salt and pepper to taste.
