Quinoa is popping up everywhere these days! It’s delicious and great for you!
Why it’s a super food:

And a delicious Quinoa salad recipe:
1 cup of quinoa
2 cups water
1 (15oz.) can garbanzo beans, drained
1/2 cup dried cranberries
1/2 cup golden raisins
1/3 cup sliced almonds
1/4 cup mint leaves, chopped
3/4 teaspoon ground coriander
1/3 teaspoon ground cumin
1 tablespoon extra-virgin olive oil
Bring water and quinoa to a boil in a saucepan over high heat. Reduce heat to medium/low, and simmer until quinoa is tender – 15-20 minutes, and water has been absorbed. Refrigerate in a large bowl until cold. Stir in all other ingredients, add salt and pepper to taste.
