Fit-Journey-Recipe Fajitas

Here are some lowfat fajita options for your Mexican fiesta!


2 teaspoons olive oil

chili powder

1/2 white or red onion, sliced

1 bell pepper, sliced

2 cloves garlic, minced

8 ounces extra-lean (95%) ground beef or 2 whole chicken breasts, grilled and cut into strips*

1/2 cup salsa

4 corn or whole wheat tortillas


Heat olive oil in a medium skillet.  Add pepper, garlic, and onion and sauté briefly.  Add meat, reduce heat to medium, and sauté until no longer pink.

Add in salsa and chili powder to taste.   Sauté for five more minutes

Divide mixture into each tortilla, wrap and serve.  This makes 4 servings.

*Can also substitute shrimp,  ground turkey, or lean steak
