Eggplant: A Super Food

Eggplants are a great tasting super food with lots of options for preparation.

Why eggplant is so good for you:

  • Eggplant has only 35 calories per 1 cup serving.
  • Eating eggplant may help lower cholesterol.
  • Eggplant contains fiber, vitamin B and potassium.

Here is a great simple grilled eggplant recipe:

Ingredients:

1 large eggplant

3 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

salt and pepper to taste

Directions:

Preheat oven to 400F.  Cut eggplant into 1/2″ to 3/4″ slices.  Place eggplant on lined or lightly oiled baking sheet. Brush with olive oil and season with salt and pepper.  Roast until golden brown (about 25 minutes).  Remove from oven and sprinkle with lemon juice.  Serve hot.  Serves 4.
