Delish Dinner

So, as many know, food is my biggest obstacle. I’ve never been an insane cooker and I’m trying my best to change that.

So, tonight for dinner, I cooked six small chicken cutlets (so that I could have two tomorrow).

I mixed lemon juice with a touch of soy sauce cooked the chicken for about 1.5 minutes then I added a canned tomato concoction* my husband’s uncle canned – he has a farm in MD and he pretty much lives completely off his land or the land of his neighbors via trade… which is cool as shit if you ask me – after that I added artichoke hearts and just let it simmer covered for 4 1/2 minutes.

I also made some whole grain rice and green beans.

It was awesome and delicious and took all of 10-15 minutes. Not tough, super delish and brilliantly healthy and filling.

Remember: Fill 1/2 your plate with veggies, 1/4 protein and 1/4 healthy grains!!!

Also, I have been using a smaller plate so that mentally it seems like more and so that I don’t have the option to eat as much.
