30 Days of Real Food Starts NOW!

OK all, so today is the big day.  I’m excited.  I started following 100 Days of Real Food blog a long time ago and have wanted to jump on it and do it forever.  I’m not sure what stopped me.  I think the thought of having to cook almost everything and sticking to something this serious scared me.  But, when my cousin did it with THREE kids, a husband and her own business for ten days, I thought well I can do it (thanks for the inspiration Rach!).

So, when I mentioned it, my #fitfam member Crystal said she wanted in.  Ben had no choice and the thought of Lillie’s school lunch makes me a little nervous… but it is all do-able.

So, yesterday Crystal and I hit Whole Foods and went to town.  Yesterday was a big cooking day, I made Jambalaya, homemade granola, slow cook chicken and Crystal made our very favorite egg salad – recipe below (I still need to make the vege fajitas).  Now, with the meal plans from 100 Days of Real Food, this should -with fun leftover recipes – last us more or less the whole week!  There are a few meals we will need other things – like this morning I had yogurt with honey and my homemade granola.  SOOO good!

Today is day one, I will keep you privy to how it’s going.  I am just so excited to eat the way we should be eating, forget this processed garbage, there is no reason for it.

AMAZING Egg salad recipe:

For 2-3 servings:

Ingredients

3 large hardboiled eggs

1 avocado

1.5 tbs of 0% Greek Yogurt

Salt & Pepper to taste

What to do:

1. Hard Boil Eggs

2. Cut the in large pieces and put them in a medium size bowl

3. Cut the avocado into large chunks and add to the bowl (save the pit)

4. Add Yogurt

5. Use a form to mash all ingredients together until just small pieces of egg and avocado are visible

6. Salt and pepper to taste

7. When storing, place avocado pit in the container to help avocado green longer
