Check out this simple delicious side dish. Goes great with turkey burgers, grilled chicken, fish or steak!
1 large butternut squash
3 tablespoons extra virgin olive oil
2 teaspoons cinnamon or nutmeg (choose to your tastes)
Preheat oven to 400 degrees. Slice open squash, remove seeds and cut flesh into cubes. Place cubes on a baking sheet and sprinkle with olive oil and cinnamon or nutmeg. Bake for 30 minutes.
