Grilled Chicken

Plain grilled chicken can be boring, but this lemon marinade is so flavorful it will wake up your taste buds!

Ingredients:

4 boneless, skinless chicken breasts

2 cloves garlic (minced)

4 tablespoons extra virgin olive oil

2 tablespoons chopped parsley

3 tablespoons fresh lemon juice

1/8 teaspoon pepper

1 red pepper

1 green pepper

1 zucchini

Directions:

Fit-Journey-Grilled-Chicken-2Combine garlic, extra virgin olive oil, parsley, lemon juice and pepper to create marinade.   Pour over chicken, and let marinate for at least an hour.  Slice peppers and zucchini. Grill chicken and vegetables over medium heat until chicken is done.  Enjoy!  If you would like an extra side to go with this dish, try our Brussels sprouts recipe from Tuesday as well!
